Fruits are round to pear-shaped. Several kinds of avocados are on the market; the Hass variety is by far the most significant in Europe. Storage advice

  • Transport: To pause the ripening process, avocados are carried at a temperature of 5˚C.
  • Shop: Display avocados outside the refrigerator in-store. Keep an ambient temperature of 16-20˚C.

Avocado Hass variety

Hass

Hass avocados have a soft texture and a creamy taste, with a gently nutty flavour. This makes Hass avocados ideal for countless recipes. The dark, bumpy skin is characteristic of this variety. Eviden has chosen to ripen only Hass avocados, to sell as ready-to-eat fruits. The quality of the fruits is consistent and the flavour development is superb. Hass avocados offer a steady rich flavour year-round.

Growing and harvesting

At the grower's

The avocado is a stone fruit that grows on trees. A fascinating detail about the growing process is that the tree is grafted with avocado cuttings. In the wild, these trees can reach up to 20 metres high. In commercial cultivation, their height is kept to 2.5 to 5 metres by pruning, to allow for easier harvesting. Trees only begin bearing fruit in the third year. Growers decide the harvesting time based on the oil content in the fruit.

Eviden avocados are picked two weeks later than usual. At that stage, the fruit holds more dry mass and the taste is nuttier. The shape and colour are also signals for growers to begin harvesting.

Not every avocado ripens at the same time. That is why growers inspect the trees several times to pick the fruits (by hand). Once picked, avocados are quickly cooled to a temperature of 12˚C at the packing station. The fruits are then washed, sorted for quality and size and packed. Now it is time to ready them for shipping to Eviden.

The journey of our avocados

After picking, washing and sorting in the packing centres, the pallets of avocados are ready for transport to their destination. Before shipping, the temperature is lowered further, now to 5˚C. They travel to the Netherlands within 7 days in containers with constant temperature control. Avocados do not carry on ripening during their 3 weeks of transport.

The ripening of our avocados

Quality control is the first task on arrival at Eviden. Our ripening experts set the temperature and humidity for the right ripening process per pallet. Ripening in climate chambers normally takes 4 to 5 days. Thanks to years of experience, our ripening experts know precisely what any avocado from anywhere in the world needs for perfect ripening. These factors differ per country of origin, region and season.

Ripening is followed by a further quality control. Only the finest avocados head to the shops with an EAT ME label.

Tips for in-store

For the best quality

  • Handle avocados gently. Ready-to-eat avocados are delicate. Do not tip avocados from the box, but move them by hand.
  • Prevent consumer disappointment. Remove 'overripe' avocados in good time. Order often to always keep stock on the shelves fresh. This will boost the turnover rate.
  • Trust the purple EAT ME label, it assures you that the avocado is ripe and full of flavour.
  • If you wish to test the fruit for firmness, gently feel with your whole hand whether the fruit gives. Avoid pressing the fruit with your fingers, this will bruise the flesh.
  • Handy consumer tip: Avocado flesh browns quickly. To avoid this, drizzle the flesh with a few drops of lemon or lime juice.
